Varinder Sahi and Anita Kothari have an abundant passion for wine and winemaking born of Varinder’s agricultural heritage in Punjab, India, Anita’s professional hospitality background and their endless thirst for travel and exploration. They began to study winemaking in earnest starting in 2014 with UC Davis’s Extension program. As a part of their studies, in 2015 Varinder and Anita first visited Paso Robles for an educational behind-the-scenes look at the area’s finest vineyards and wineries, including Booker Vineyards where they revisited to work the 2016 harvest with Eric Jensen. The indelible spirit of Paso’s winemakers, their sense of community and commitment to excellence, was apparent from day one. Varinder and Anita realized that Paso Robles was as much about the people as it was about the land and they knew that they were home.

Why Christie Corgiat chose Paso Robles
The Story of Copia Vineyards and Winery In 2015, Varinder and Anita first visited Paso Robles, California as part of an educational tour and fell in love with the land and its people. They began to search for a site that could be a home to a vineyard that would produce boutique world-class Rhone style wine. In the Autumn of 2017, they found a small vineyard and beautiful home among the scenic hills on the west side of Paso Robles where two acres of Grenache, Syrah and Mourvèdre were planted (2011). That vineyard was Copia in the Willow Creek District. Copia, named for the Roman Goddess of Abundance, was a perfect expression of what Varinder and Anita were seeking. The combination of calcareous soil and steep slopes made it an ideal site to produce premium fruit. They purchased the 25-acre property by year’s end and commenced plans to expand the vineyard. Currently, Copia Vineyards produces around 300 cases of wine using premium fruit both from the estate and our neighbors. The current offerings are available at The Paso Underground tasting room (1040 Pine Street in Downtown Paso Robles) and on www.copiavineyards.com.

Great weekend in Paso
We had a great time in Paso Robles. The views were beautiful and many wonderful touches: a complimentary bottle of wine, kitchen stocked with the basics (although could use a few more coffee mugs), lovely outdoor spaces to sit and enjoy the scenery. Would definitely recommend to a friend!
This home is a absolutely wonderful home for a small family, My husband and my daughter with three kids fit fine in this house, The location was out on open country but still close to town and view are amazing.
It would of been nice to have a small dresser to put our small clothing in a drawer, stead of floor.
Bathroom is large but would love a bathtub in one of the bathroom. But jacuzzi was wonderful overlooking the back yard. Thank you very Christie for welcoming us with Copia wine, my daughter and my husband finished it in one night. Even my grand kids loved the home so much, they wanted to know when we were coming back. We will definatelly be back.
Nice, restful place in the middle of Central CA wine country.
This is a nice home, in a beautiful location. Everything you need is there for you. Good privacy. Only slight complaint is maintenance could be a tad better. Did not use hot tub because it did not look very inviting--old, and very heavily chlorinated. Some of the towel bars could use reinforcing, and no place to put your things down in the bedrooms--night tables too teeny. But pretty. An electric tea kettle would be nice.
Perfect Paso getaway spot for 2 couples
The Copia guesthouse was the absolute perfect place for 2 couples to enjoy a weekend in Paso. It offered privacy with a large, comfortable living room and outdoor areas for socializing. The location is perfect for wine tasting and is surprising close to downtown given the feeling of being out the country. The house was immaculate and fully stocked with everything you need. The views are amazing. The beds were very comfortable which is extremely important to us when we travel. The property manager, Christie, was the perfect host. Thank you Christie, Anita and Varinder so much for sharing your beautiful guesthouse with us, we are already planning our visit for next year!
Peaceful and spacious getaway
Some properties are just a place to stay, but this spot makes you feel special. Not only is the property lovely, but we appreciated all the welcoming touches: from a bottle of their Copia wine, to coffee and a well-appointed kitchen if we wanted to cook. We could easily have settled in for much longer. There is plenty of space at a dinner table or kitchen nook, plus comfortable beds with their own bathrooms. We loved sitting outside in the evening around the fire pit. Communication and check in were excellent. We highly recommend this spot.
Great Spacious Stay
Our stay was wonderful! The property is perfect for a easy weekend away. Very accessible and close in proximity to wineries and downtown. Extremely Spacious! Most of all finish work looked almost brand new. Very clean!
