OENOLOGICAL ITINERARY: in the Apulia region, wine producers have invested in modern technologies in order to emphasise the local vineyards. The more famous red wines are the Primitivo di Manduria and the Salice Salentino, whereas amongst white wines, let's quote the Martina Franca and the Locorotondo. The Doc of Castel del Monte gives plenty of white, red and rosé wines. Here is a suggestion for an oenological itinerary: starting from Conversano in the Bari direction (Tormaresca), so towards the inland in the Ruvo di Puglia direction (Il Grifo), Corato (consortium of DOC wines of Castel del Monte), Andria (Spagnoletti) where the Rivera wine-producing cooperatives are located. We continue towards Barletta (Falcone wine-producing cooperative), Trani (Moscato) Molfetta to join the Murge towards the inland at Gravina in Puglia (Botromagno). The itinerary continues towards Altamura, Gioia del Colle (cantine del Colle), Turi (Coppi), Alberobello, Martina Franca, Locorotondo. Then we return to Cozze.
THE GASTRONOMY OF APULIA: the gastronomy of Apulia is marked by the influence of the many populations that have lived in this fertile land during the centuries. The local cuisine is rich in products but not very sophisticated. Three elements prevail: olive oil, one of the best in the world, many vegetables produced on this land and durum wheat. Pasta, in particular the home-made one, is always served on Apulia's tables, seasoned with various sauces made with vegetables or fish. The 'orecchiette aux cime di rapa' and the 'tiella' (terracotta pot) of rice, potatoes and mussels are very famous. Fish is very appreciated and prepared following many recipes. The mussels of Taranto are amongst the best of Italy. If you prefer meat, do not miss the lamb, cooked slowly in a terracotta stove. Finally, the traditional practise of transhumance has left here an important tradition of cheese-producing: especially the delicious 'mozzarella' and the 'burrata di Andria'.
