The Outpost is where community and adventure meet. Right in town, you’re close to the action, live music, eclectic eats, and endless outdoor fun just beyond town. Perfect for friends, explorers, and anyone who wants to drop their bags and dive right into the good stuff.

Rachel’s Keep On Keeping On isn’t just a stay, it’s a vibe. A little wild, a little grounded, and built for people who like good food, good company, and days that don’t look the same twice.

Located in the heart of South Fork, the property includes three cabins surrounding a lively, community-driven hub: an on-site food truck, coffee shop, and bar serving up ranch-to-table meals and locally roasted coffee.

Summer: breakfast, lunch, dinner, full bar, live music, and long evenings with good people

Winter: coffee, breakfast, and early starts before hitting the slopes or trails

It’s the kind of place where you grab coffee in the morning, disappear into the mountains all day, and come back to stories, music, and a drink at night.

You’ll have full private access to the Outpost cabin, including your sleeping space, bathroom, and in-room coffee maker. These aren't just any beans either, they're roasted in house.

Outside, enjoy shared seating areas with mountain and river views, plus access to the on-site restaurant, bar, and gathering spaces.

There’s plenty of parking, including space for trailers, making it easy to bring ATVs, snowmobiles, or gear for your next adventure.

Self check-in keeps things easy and flexible, arrive on your time and settle in.

We’re around if you need anything, whether it’s trail tips, local recommendations, or just providing you with the best coffee or post-ride meal in South Fork.

No kitchen: In-room coffee maker provided with in-house roasted coffee; full food and drink available on-site

Heating only: No AC (cool mountain evenings usually do the job)

Strong WiFi for staying connected (or pretending to)

Pets allowed (with guidelines):
One pet (75 lb max), must be house-trained, leashed outside, not allowed on furniture, and if left unattended they need to e crated. All pets must be disclosed at booking.

Cute Cabins, Arrival Process Needs Some Work

The cabins (Doghouse 1 and 2) were super cute and comfortable, and as listed. We didn’t receive the code to gain access to the cabins before arrival, and the host didn’t respond to my message and phone call. Luckily, there was a couple staying in the third cabin who happened to get there while we were standing in the parking area trying to figure out what to do. They knew the owner and knew the door codes and were able to get us inside. The beds were very comfortable, and the large sectional was as well. The bathroom was well stocked and had everything we needed. There was a Keurig but no coffee pods, and the food truck next door was closed the days we were there, so we were disappointed there was no coffee available on the property. The last thing I’ll note is that the sofa could have been cleaned a little better. Everytime we sat on it, dog hair stuck to our clothes.

This is what happens when You Buy A Girl A Food Truck. It’s not the prettiest or the most expensive - it’s even a little “ghetto” (or classic, which ever you prefer). It has been worked hard, it has character, and a lot of sass! Wait a minute… that sounds a lot like Rachel…

A little history. I carry the pride and honor of being the oldest daughter of four girls to a Fourth generation rancher. The family ranch homestead in 1873 is still a working ranch run by my incredibly hard working and well respected dad. He believed in me enough to invest in my future and my passion. I haven’t taken the easiest of roads or paths and at age 53, I’m working this dream with all I have. I always say ‘be careful what you dream’ because when it comes true you have to fight for that dream and work it every single day.

I was a single mom of two little girls when I dragged us from Creede to Denver to attend Chef School. Ignorance is bliss. Once again I dug deep and fought hard to get through that program so I could provide a better future for my girls and myself. There are a lot of journeys that took place from graduation in 1997 until 2015 when I opened KOKO the Food Truck, and then 2 years later I added the Coffee Can and our Mini Golf. So much I could fill a book. Lessons learned, addictions fed and ultimately defeated, and in the meantime dragging myself and daughters like tumbleweeds in the wind through all of it. Nothing like guilt and fear to make you want to do better, and ultimately be better. Which leads me to naming my truck and business. Keep On Keepin On aka KOKO because really what other choice is there? Give up is not in this girl. I have surrendered a few battles (that weren’t worth the blood) and walked away. But not with KOKO. I am building my business with love and valuable support from an incredible team that is now family.

Where do I begin? Not only do we stand out as far as looks are concerned in South Fork, but in personality as well! Our cabins are nestled against the South Fork of the Rio grande, our food and beverage items are unlike any other in the San Luis Valley, and the access to adventure is out the front door.
