The wonderful Wild Coyote Estate Winery
Firstly, let me tell you that Gianni and Kati are wonderful hosts! They also employ a very energetic and helpful staff, that may tell you something about them! We loved the house, it is up on the hill overlooking the Zinfandel Vines, my personal favorite. The house sleeps 6 very comfortably and is equipped with everything you could possibly need to make your visit enjoyable. We went on the winery tour behind the scenes which takes place every saturday morning at 10 am. Gianni will tell you his philosophy on how he farms his berries(grapes) and he will tell you about how he creates his wine. You will be informed on what Paso Robles is and should be known for, red wine! After his "class", you will have a lovely barrel tasting of his wines which are pretty incredible. He and Kati have a small winery and produce about 3,000 cases a year. That's a pittance against the big boys in the business but his style is impeccable. We lost power on the 3rd nite there, no fault to the owners, we just had the most incredible thunder/lightening and rain storm! Amazing and good for water starved California. The house has a gas stove, grill and water heater, so it put no crimp in our day but Gianni was very apologetic. No worries, we were headed out for wine tastings anyway! We also were there during the Wine Dinner at Wild Coyote and they graciously allowed the 4 of us to join in. Kati is a wonderful cook and hostess. Dinner was delicious. They also give great recommendations for area restaurants. The fun winner there was Fish Gaucho in Paso. It is Gianni and Kati's favorite new restaurant with good reason. Kati also was generous with her garden goods! We give our thanks to Gianni, Kati, Jessica and Diane. Go. Enjoy. Savor the wine of Paso Robles!

Amazing
A perfect B & B for us. Beautiful property, very clean, spectacular view, and amazing staff. Not to mention the fabulous breakfast we were served everyday. Peaceful, relaxing ,quiet, and good location.Owners were very hospitable. Thank you!

OUR STORY... When Gianni Manucci (Owner/Winemaker) retired from architecture, he took all his skills and passion to transform an entire forty acre site from dirt to wine. His education from UC Davis in winemaking and his European roots in grape farming created a truly unique landscape similar to the Tuscany region. Coupled with his wife (Kati Manucci) with interior design & food catering allows them to complement each other and share their passion. They have three children (Christian, Sage Isabella, Sophia) all born and raised on the estate and starting to take interest in helping papa & mimi.
