Hi! We’re Marcus & Jamie—long-time Hudson Valley locals and the chef-owners behind Aroma Thyme Bistro, our award-winning, farm-to-table restaurant in nearby Ellenville (est. 2003). Marcus is a “Chef on a Mission,” and our hospitality philosophy is simple: clean, real ingredients; care for people and place; and the kind of thoughtful details that make travel feel effortless. We’ve welcomed guests for over two decades, earned recognition for sustainability as the region’s first Certified Green® Restaurant, and built deep relationships with small producers across the Valley and beyond.
When we’re not in the kitchen, we’re on the road with VIP Winery Vacations—our boutique, award-winning wine & gastronomy trips. We’ve personally visited 300+ wineries across six countries and love connecting guests to makers, hidden tasting rooms, and the stories behind the bottles. That curiosity spills into everything we do: hiking Minnewaska at sunrise, chasing waterfalls, talking mezcal and tequila, shopping farm stands, and finding the best coffee, bakeries, and markets in every town.
Hosting is a natural extension of our life’s work. We keep communication fast and friendly, spaces spotless, and amenities dialed—chef-level kitchens, plush linens, and a curated local guide so you arrive with an instant game plan. We chose this pocket of the Ellenville area because it puts you right where the Shawangunk Mountain Range begins—wild, quiet, and minutes from the Valley’s best trails—yet close to everything that makes the Hudson Valley fun and easy. Within a short drive you can be at Minnewaska State Park, Sam’s Point, the Ice Caves, Verkeerderkill Falls, and the O&W Rail Trail for hiking, biking, swimming holes, leaf-peeping, snowshoeing, and big starry skies at night.
Food and wine are our world, so proximity matters: our award-winning farm-to-table restaurant, Aroma Thyme Bistro, is just minutes away for a relaxed dinner, a celebratory night out, or a glass of something special after the trails. The Shawangunk Wine Trail is close, too, with tasting rooms and vineyard views in every direction—plus farm stands, orchards, bakeries, and weekend markets that make eating local effortless.
When you want a bigger outing, Bethel Woods Center for the Arts (home of the Woodstock site) is an easy, scenic drive for concerts under the stars. Winter brings family-friendly skiing and tubing at Holiday Mountain, and the Resorts World Catskills casino is nearby for entertainment, dining, and a bit of sparkle when the mood strikes.

A major difference is who’s hosting you. We’re Marcus & Jamie, chef-owners of the award-winning, farm-to-table Aroma Thyme Bistro (est. 2003). Hospitality is our career and our calling—more mission than business—so you’ll feel the details: spotless standards, fast, friendly communication, clear instructions, and thoughtful touches that make travel effortless. Because the restaurant is just minutes away, our house guests receive a complimentary wine sampling at Aroma Thyme—our way of saying welcome and sharing what we love.

We’re minutes to the best Shawangunk trails—Minnewaska State Park, Sam’s Point, the Ice Caves, Verkeerderkill Falls, and the O&W Rail Trail—so adventure never turns into logistics. You’re also close to the Shawangunk Wine Trail and great farm stands, bakeries, and breweries.
