About Susan Martin
We are Susan Martin and Adrian Hussey, Canadian owners of La Serre. We are retired and live in Owen Sound, Canada. We spend as much time as possible visiting our vacation property in France. We love to travel, enjoy fine dining, wine tasting and immersing ourselves in the local French culture. We also enjoy trips to Spain which is only an hour away! Adrian explores the region via mountain bike.
Susan Martin purchased this House in 2006
Why Susan Martin chose Paziols
We fell in love with this part of France as it is stunningly beautiful, off the typical tourist radar and has lots to see and do. It is also a prime grape growing region, home to many small vintners who make really good, reasonably priced wine. The people in our small town of Paziols are very friendly and welcoming. The area is quiet and peaceful. We like to be physically active and there is lots of hiking, cycling, swimming in the local rivers and lovely Mediterranean beaches. It is a great part of the world for bird watching. For excitement, it is only an hour's drive away to Spain, 1 hour to Figureres, 1.5 hours to Girona, 2.5 hours to Barcelona. Toulouse is 2 hours drive, Montpellier 1.5 hours, Narbonne and Carcassone one hour's drive and Perpignan 45 minutes drive.
What makes this House unique

Comfort in the heart of rural France
We spent 2 weeks in Paziols at La Sommet. The house is comfortable and clean and tucked into a quiet hillside village overlooking a valley of vineyards. The two bedrooms are on separate floors with ensuites and very private. Good for 2 couples vacationing together. The upstairs living room is spacious and has a very comfortable sectional sofa for late evening chats. The balcony off the living room is a gem. We ate almost all our meals on this balcony with an amazing view over the valley and to the hills beyond. Although the sunsets were behind us, their reflections on the rocky slopes and the beautiful skies were wondrous. The perfect way to end a day. The first floor has a well equipped kitchen and a large dining table with a little outside cafe table where the morning sun is warm. From the house, we travelled to four Cathar Castels including Carcasonne, several great swimming gorges and enjoyed endless kilometres of back roads on our mountain bikes through the valley and beyond. The local markets are great and the local winery produces excellent wines with a personal touch. Susan left us a binder with recommendations for local restaurants and we enjoyed many of them.
A great vacation. We hope to return someday.
Merci!
Fabulous French Country Charm
I spent 2 weeks at Le Serre in the village of Paziols and it was fabulous! The weather was amazing for April. Le Sommet is very spacious with two separate bedrooms with ensuites, the kitchen/dining area and the loft-style living area with walkout to a terrace that has an amazing view over the village and the valley. L'Ecurie studio is very quaint with double French doors opening to the courtyard and gardens. Paziols is a quiet little village that offers the necessary amenities (café, restaurant, convenience store) and is well situated to explore the foothills of the Pyrenees, the many local vineyards and the beaches of the Mediterranean. It was only a short drive to a great outdoor market in Ceret where you could buy anything from fresh fruit and vegetables, pottery, clothes, baskets, soaps, etc. The location is also great for day trips to see Cathar Castles such as Peyrepertuse and Queribus, visit the walled city of Carcassonne or to visit beautiful seaside ports in Spain. There is also great biking routes and scenic hiking through the valley and around the many vineyards. And there is plenty of great wines to choose from!!
Le Serre offered all the comforts needed and it was always great ending the day with a glass of wine on the terrace. I will definitely be coming back!
Most parts were really good....
This was a tough one to review. When we arrived, unfortunately the house was really not very clean. We spent the first evening doing a thorough clean. Then we went upstairs and saw the fabulous view! Incredible!! On the whole, here were the good points: the view was truly outstanding. The decorating was absolutely lovely. The appliances were all new and easy to use. The beds and furniture are really comfortable The town is very quaint and the people in it were very approachable. Only two bad notes for me. The cleaning, which we told Susan about and I think it will definitely be changed for the next guests. Also, to say the house is renovated is a stretch. The bathrooms are very old and need to be updated. The kitchen cabinets need work and the plaster repair is a little on the funky side. However, the view is so spectacular, 3 stars, almost 4!
I was very sorry to hear about the experience of our guests and have addressed the cleaning issues with my cleaner. This has not happened in the past. I have also made changes to my listing, removing the word "renovated" so that there is no confusion about the house. As mentioned it is charming, well decorated and very comfortable with fabulous views and up-to-date appliances. However we have not super modernized the bathrooms and kitchen as we feel that is not in keeping with the character of the house.
Great French Countryside vacation
My husband and I rented the Sommet for 2 weeks in the early fall of 2014. After a long drive from Paris were were glad to have arrived. This large apartment has every thing you need to be comfortable during your stay. The second floor living room and balcony were the best, great for sunrises and sunsets over looking the small town of Pazoils and vineyards. A complete kitchen with clothes washer and dishwasher make it feel like home. The local market is only a few minutes walk away with all the basic supplies as well a local visiting venders such as butcher, dairy producer, produce and pizza truck. It was a great base for visiting the Cathar castles, wineries and the Mediterranean sea. The reservation process was simple and easy with ALL our questions being answered before arrival. A great place to experience local french life at a relaxing pace ! Would highly recommend this property .
Complete immersion in the French culture
My husband and I have stayed at Le Sommet, the largest apartment of Le Serre for 7 days in 2012 & 10 days in 2014. Le Serre offers the choice of 3 accommodations depending on your budget and needs. Le Sommet is a very roomy, comfortable & well appointed apartment. It is a blend of modern conveniences and rustic French country charm. The view from the upper terrace is magnificent. To enjoy a nibble and a glass of wine at sunset overlooking the foothills of the Pyrenesse and castle ruins is the best way to end a busy day. Le Serre is a very peaceful, relaxing and safe accommodation. It is a well located base to explore the varied and amazing places located in the area. Be prepared to do a lot of mountain driving.
Paziols is a tiny ( approx. 275 people), very French village with basic yet adequate services. The residents of Paziols are friendly and kind if you make the effort to engage them. Otherwise they carry on their daily activities.
The area around Paziols has a vast amount of interesting places to visit and activities for all ages. It is not a commercialized tourist area. You must do your research to find the hidden gems that abound here. There are numerous tourist books and brochures at Le Serre to refer to and the journal from other Le Serre visitors is an excellent source of information.
We would highly recommend a stay at Le Serre in Paziols. We hope to return again because it seems like a second home to us.
Le Sommet is situated in the village of Paziols in the hills of Cathar Country. The village of Paziols is a rustic, charming, hillside village which encourages a laid-back lifestyle and boasts plenty of sunshine in which visitors can enjoy the stunning surroundings and cool off in the local swimming hole. The village is well placed for exploring the beautiful beaches of the Mediterranean, taking a day trip to Spain, hiking, or discovering the fascinating history of the Cathars. Walking, Hiking, and Mountain Biking In the valley, the walking is gentle. Once you get out of the valley there are more challenging walks, hikes, and mountain biking trails in the surrounding foothills, or for extreme activities you can visit the Pyrenees Mountains, that are located about an hour drive from Paziols. The great medieval castles are a spectacular feature of the region. The Albigensian crusade against the Cathar heresy occurred in this region in the 13th century - a brutal and dramatic history which comes vividly to life among the castle ruins. The extraordinary walled city of Carcassonne, one of the most dramatic medieval sites of Europe, is only an hours drive away. For the bird watcher and naturalist, the area has a wide variety of Mediterranean flowers, birds (flamingoes and egrets on the Etangs) and animals, including wild boar. Within walking distance of La Serre, our local river, the Verdouble provides a beautiful and safe place for swimming and sunbathing. As well, the Mediterranean is only 45 minutes drive away and it is littered with miles of sandy beaches. And, the Etangs, inland salt water lakes, are ideal for wind-surfing and sailing. The region has many award-winning wines. In Paziols, we recommend Domaine Bertrand Bergé. In Tuchan: Château de Nouvelles - lovely Château with excellent wines. Domaine de Rolland and Chateau Wialu. Cucugnan - Chateau Trillol. This is just a small sample. There are many more wonderful local wines for you to check out. There are many provincial style restaurants offering famous local French country cooking. Below is a list of our favorite restaurants, all within a 5-20 minute walk or drive of L'Ecurie. We strongly suggest you make reservations at any of the restaurants before you head out. Le Reve d’Angele - Five minutes walk from L'Ecurie in the centre of Paziols, this lovely, small restaurant offers traditional, local cuisine and wines at very affordable prices. Dishes such as a seafood platter, fresh fish, brochettes and assorted meat are prepared from the freshest local ingredients and the ‘set’ menus are very good value for money. Auberge du Vieux Puits -Fontjoncouse - 3 Michelin star restaurant 30 minute drive from Paziols. Le Petit-Gris -Tautavel - Route d’Estagel - 04 68 29 42 42 In a quiet setting just 10 minutes drive from Paziols and outside the town of Tautavel, this charming and friendly restaurant offers local cuisine in a pleasant and comfortable atmosphere. The large windows offer scenic views of the vineyards and the Pyrenees. Specialties include rabbit or snails grilled over a wood fire, grilled sweet peppers and eggplant, various fish dishes, chocolate and honey tart and other Catalan specialties. Auberge du Vigneron - Cucugan - In the town of Cucugan, 13 km drive from Paziols, this former wine making building has been converted into a rustic restaurant. With stone walls, oak casks and wine making equipment for ambiance, this auberge serves authentic cuisine of the land at reasonable prices. Menu items include tomato tart with basil, quail, foie gras and fried red mullet. L’Auberge du Cellier - Montner - 1 Michelin star- Approximately 18 km from Paziols, this restaurant is one of our favourites. Situated in a pretty village the innovative menu presents foie gras in 3 ways, typical food in a creative way. The knowledgeable staff can provide advice on wines to complement your meal. Le Pichenouille - Maury - Unassuming, comfortable, cosy restaurant with authentic local cuisine, good value for the money and over 200 local wines.
