Varinder Sahi and Anita Kothari have an abundant passion for wine and winemaking born of Varinder’s agricultural heritage in Punjab, India, Anita’s professional hospitality background and their endless thirst for travel and exploration. They began to study winemaking in earnest starting in 2014 with UC Davis’s Extension program. As a part of their studies, in 2015 Varinder and Anita first visited Paso Robles for an educational behind-the-scenes look at the area’s finest vineyards and wineries, including Booker Vineyards where they revisited to work the 2016 harvest with Eric Jensen. The indelible spirit of Paso’s winemakers, their sense of community and commitment to excellence, was apparent from day one. Varinder and Anita realized that Paso Robles was as much about the people as it was about the land and they knew that they were home.

Why Christie Corgiat chose Paso Robles
The Story of Copia Vineyards and Winery In 2015, Varinder and Anita first visited Paso Robles, California as part of an educational tour and fell in love with the land and its people. They began to search for a site that could be a home to a vineyard that would produce boutique world-class Rhone style wine. In the Autumn of 2017, they found a small vineyard and beautiful home among the scenic hills on the west side of Paso Robles where two acres of Grenache, Syrah and Mourvèdre were planted (2011). That vineyard was Copia in the Willow Creek District. Copia, named for the Roman Goddess of Abundance, was a perfect expression of what Varinder and Anita were seeking. The combination of calcareous soil and steep slopes made it an ideal site to produce premium fruit. They purchased the 25-acre property by year’s end and commenced plans to expand the vineyard. Currently, Copia Vineyards produces around 300 cases of wine using premium fruit both from the estate and our neighbors. The current offerings are available at The Paso Underground tasting room (1040 Pine Street in Downtown Paso Robles) and on www.copiavineyards.com.

The house is great - beautiful to watch sunset on the lawn. Felt very private, but close to town. Would highly recommend!

My family had a wonderful experience at the Copia vineyard guesthouse. It was such a peaceful retreat and gave you a true sense of wine country only 2 minutes from downtown! Loved the open floor plan, awesome jacuzzi overlooking an amazing view, best equipped kitchen I’ve ever had at a vrbo, the house was clean, well designed and even had laundry! Christie the manager was wonderful to work with and very attentive. We can’t wait to stay at Copia again! Thanks for sharing your gorgeous property with us!

Great getaway with a beautiful view
Had a wonderful time quarantined at this home away from home. Plenty of open space and room to move around. The space was thoroughly cleaned twice before our arrival. And hostess was always available to answer questions. Both the kids and the dog had a great time outdoors and played comfortably inside with excellent wifi for their electronics. Would definitely stay again!
This is the perfect place for two to four people. First, communication with the manager/owner is spot on, very thorough. Four of us arrived to find two bedrooms, each with their own bath, either side of the living room. The beds were comfortable and it was quiet at night. The kitchen was well equipped. I am sure we would have enjoyed the property even more but our weekend stay was cold and wet. There is a nice porch and a hot-tub. The views are spectacular.
Bucolic guest house and surroundings
We had a lovely weekend at the Copia Guest House. Well-appointed, amazing location (5 minutes from town, yet away from it all), gorgeous views, thoughtful touches throughout the house. Wish we had more time to spend! We will be back.
